✨Ingredients:
1/2 cup toor daal (lentils)
1 1/2 cups water (adjust to preference)
2-4 tbsp fresh dill, chopped
2-3 tbsp fresh coriander, chopped
1 large tomato, chopped
1/4 cup mixed veggies (carrots, peas, etc.)
Salt to taste
1/3 tsp turmeric powder
1/2 tsp coriander powder (optional)
✨For Tempering:
1 tbsp coconut oil
1 tbsp garlic, crushed
1 tbsp cumin seeds
1 green chili, minced (adjust to taste)
A pinch of asafoetida (hing)
✨Instructions:
Prepare the Daal: Wash and soak the toor daal for 4-8 hours (optional, but recommended for a creamier texture and better nutrient quality). Add the soaked daal to a pressure cooker with 1 1/2 cups of water. If you're not using a pressure cooker, you may need to add more water.
Add Ingredients: Mix in the dill, coriander, tomato, and your choice of veggies. Add salt, turmeric, and coriander powder to taste.
Cook: Pressure cook the daal until it's soft and well-cooked. If using a regular pot, cook on medium heat until the daal is tender, adding water as needed to reach your desired consistency.
Tempering: In a small pan, heat the coconut oil over low heat. Add the crushed garlic and roast until golden. Then, add cumin seeds, minced green chili, and a pinch of asafoetida. Let it sizzle for a few seconds before pouring it over the cooked daal.
Serve: Stir the tempering into the daal and serve hot with rice or Indian bread.
