Tofu Scramble Recipe by Nora Cooks

You must try this power-packed scramble for a fluffy and delicious breakfast (or any meal of the day, really). 🤤✨


Ingredients

  • 1 tablespoon of olive oil (optional)

  • 1 block of (16-ounce) firm tofu

  • 2 tablespoons of nutritional yeast

  • 1/2 teaspoon of salt (more to taste)

  • 1/4 teaspoon of turmeric

  • 1/4 teaspoon of garlic powder

  • 2 tablespoons of non-dairy, unsweetened, and unflavored milk (i.e., almond, oat, cashew, soy)


Instructions

  1. Heat olive oil in a pan over medium heat (can make oil-free with a little water instead, still tastes great).

  2. Mash or crumble the tofu right in the pan.

  3. Stir frequently for about 3-4 minutes, until the water from the tofu is mostly gone.

  4. Add the nutritional yeast, salt, turmeric, and garlic powder.

  5. Cook and stir constantly for about 5 minutes.

  6. Pour your choice of non-dairy milk into the pan, and stir to mix.

  7. Serve immediately with breakfast items like toast, sliced avocado, or steamed kale/spinach.
